Crispy Hot Honey Feta Chicken

Crispy chicken breasts topped with creamy feta and drenched in hot honey – this dinner is truly irresistible! Perfect for a quick weeknight meal or a special occasion, this dish combines sweet, spicy, and savory flavors in every bite.

  • Hot Honey:
    • 1/3 cup / 110g Honey
    • 1 1/2 tsp Hot Sauce (e.g., Frank’s or Cholula)
    • 3/4 tsp Chili Flakes
  • Chicken & Coating:
    • 2x 250g/9oz Chicken Breasts
    • 2 tsp Paprika
    • 1 tsp Salt
    • 1/2 tsp EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
    • 1/4 tsp Cayenne Pepper
    • 35g / 1/4 cup Plain Flour
    • 2 Eggs, beaten
    • 65g / 1 cup Panko Breadcrumbs
    • Veg Oil, as needed (6-8 tbsp)
  • Topping:
    • 200g / 7oz Feta, crumbled

Instructions

1. Prepare the Hot Honey

  1. In a small bowl, combine honey, hot sauce, and chili flakes.
  2. Warm in the microwave for 20 seconds or heat in a small pot on the stove until simmering. Stir and let cool. Adjust spiciness to taste.

2. Prepare the Chicken

  1. Horizontally slice each chicken breast through the center to create 4 even-sized pieces.
  2. In a small bowl, mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.

3. Coat the Chicken

  1. Set up 3 shallow dishes:
    • First Dish: Flour mixed with half of the seasoning.
    • Second Dish: Beaten eggs.
    • Third Dish: Panko breadcrumbs mixed with the remaining seasoning.
  2. Dredge each chicken piece in the flour, then dip in the egg, and finally coat with breadcrumbs. Place on a tray.

4. Cook the Chicken

  1. Heat oil in a large pan over medium-high heat. Test the oil by dropping in a breadcrumb – it should sizzle rapidly.
  2. Fry the chicken for 3-4 minutes per side until golden and crispy. Ensure the internal temperature reaches 165°F (74°C). Place on a wire rack to drain.

5. Add Feta and Grill

  1. Sprinkle crumbled feta over the chicken, covering as much as possible.
  2. Place under a preheated grill (broiler) on high until the feta turns golden and slightly crisp (about 2-3 minutes).

6. Serve

  1. Drizzle the hot honey over the chicken.
  2. Serve immediately with your choice of sides.

  1. Adjust the Heat: Customize the spiciness of the hot honey by adding more or less chili flakes and hot sauce.
