Crispy Fried Cornbread: A Southern Delight

  • 2 cups cornmeal
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 ½ cups boiling water or milk
  • Vegetable oil for frying

Instructions

  • Prepare the Batter: In a large bowl, mix together the cornmeal, salt, and sugar (if using). Gradually stir in the boiling water or milk, mixing until a thick batter is formed. Let the batter sit for a few minutes to thicken.
  • Heat the Oil: In a large skillet, heat about ½ inch of vegetable oil over medium-high heat.
  • Form and Fry the Cornbread: Once the oil is hot, drop spoonfuls of the cornbread batter into the skillet. Flatten the batter slightly with the back of the spoon to form patties. Fry the cornbread for 2-3 minutes on each side, or until golden brown and crispy. Remove the cornbread from the skillet and drain on paper towels.
  • Serve: Serve the fried cornbread warm. It pairs well with honey, butter, or as an accompaniment to greens, beans, or stews.
