Ingredients

Scale

Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup chili-garlic sauce
  • 1 tablespoon honey
  • 2 teaspoons sriracha
  • 1 teaspoon paprika
  • 1 teaspoon lemon juice
  • Black pepper, to taste
  • Salt, to taste

Bang Bang Chicken:

  • 1 lb chicken breast, cut into bite-sized pieces
  • ¾ cup cornstarch
  • ½ cup buttermilk
  • 1 tablespoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • Vegetable oil, for frying
  • Spicy chili flakes (optional, for garnish)
  • Fresh chopped parsley (optional, for garnish)

Instructions

To Prepare the Bang Bang Sauce:

  1. In a small bowl, combine mayonnaise, chili-garlic sauce, honey, sriracha, paprika, lemon juice, black pepper, and salt.
  2. Mix well until smooth. Taste and adjust seasoning if needed.
  3. Refrigerate the sauce until ready to use.

To Prepare the Bang Bang Chicken:

  1. Heat 2 inches of vegetable oil in a wide pot or deep skillet to 375°F (190°C).
  2. In a large bowl, soak the chicken pieces in buttermilk while the oil heats.
  3. In a separate bowl, whisk together cornstarch, paprika, salt, and black pepper.
  4. Remove the chicken from the buttermilk, shaking off any excess, and coat each piece in the seasoned cornstarch mixture.
  5. Carefully place the coated chicken pieces into the hot oil and fry for 2-3 minutes per side, or until golden brown and cooked through.
  6. Remove the fried chicken and drain on paper towels to remove excess oil.

To Serve:

  1. Toss the fried chicken in the prepared Bang Bang Sauce until evenly coated.
  2. Garnish with spicy chili flakes and fresh parsley if desired.
  3. Serve immediately while hot and crispy!

Notes

  • Oil Temperature: Use a kitchen thermometer to ensure the oil stays at 375°F. If the oil is too hot, the chicken will burn; if it’s too cool, the chicken will absorb too much oil and become greasy.
  • Buttermilk Substitute: If you don’t have buttermilk, mix ½ cup milk with 1 teaspoon lemon juice or vinegar and let it sit for 5 minutes.
  • Make It Healthier: For a lighter version, bake the chicken at 400°F (200°C) for 20-25 minutes instead of frying.
  • Sauce Adjustments: Adjust the spiciness by adding more or less sriracha and chili-garlic sauce to suit your taste.
