Creamy Cucumber Salad: A Refreshing Classic Recipe Just Like Grandma Made!

Creamy Cucumber Salad

A refreshing and creamy salad that’s perfect for summer gatherings, picnics, or as a light side dish! This Creamy Cucumber Salad is made with crisp cucumbers, tangy red onions, and a smooth, herby dressing. It’s quick, easy, and full of fresh flavors—just like Grandma used to make!

Ingredients

Scale
  • 3 cups thinly sliced cucumbers
  • 1 cup thinly sliced red onion
  • ½ cup sour cream
  • 1 tbsp white vinegar
  • 2 tbsp minced fresh dill (plus extra for garnish)
  • 1 tsp granulated sugar
  • ½ tsp salt
  • ¼ tsp garlic powder
  • Fresh black pepper (to taste)

Instructions

  1. Prepare the Vegetables:
    • Thinly slice the red onion (using a knife or mandoline).
    • Wash and thinly slice the cucumbers. Pat them dry with a paper towel to remove excess moisture.
  2. Make the Dressing:
    • In a medium bowl, mix sour cream, vinegar, dill, sugar, salt, and garlic powder until smooth.
  3. Combine & Chill:
    • Add the sliced cucumbers and onions to the dressing and toss gently to coat.
    • Garnish with extra fresh dill and a sprinkle of black pepper.
    • Serve immediately or refrigerate for at least 1 hour to let flavors meld.

Notes

✔ Make Ahead: For best flavor, prepare 1-2 hours ahead and chill.
✔ Storage: Keep in an airtight container in the fridge for up to 3 days.
✔ Prevent Sogginess: If making ahead, store sliced cucumbers and onions separately, then mix with dressing just before serving.
