Ingredients

Scale

Pasta:

  • 8 ounces linguine

Chicken:

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch bites
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon paprika
  • ½ teaspoon garlic salt
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

Sauce:

  • ¼ cup (4 tablespoons) cowboy butter, divided
  • ¾ cup heavy cream
  • 1 teaspoon garlic salt
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon lemon juice
  • Lemon slices, for garnish
  • Parsley, chopped, for garnish

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add linguine and cook until al dente as per package instructions. Drain and set aside.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer. Season evenly with paprika, garlic salt, salt, and pepper. Cook for 3-4 minutes on one side until golden.
  3. Add Cowboy Butter: Add 2 tablespoons of cowboy butter to the skillet. Flip chicken pieces and cook until browned and cooked through (internal temperature of 165°F), about another 3-4 minutes. Remove the chicken from the skillet and set aside, covering it to keep warm.
  4. Make the Sauce: Lower heat to low, add remaining cowboy butter, heavy cream, garlic salt, and red pepper flakes. Stir, scraping up browned bits from the pan.
  5. Combine: Add cooked linguine and chicken to the skillet, tossing to coat in the sauce. Stir in lemon juice.
  6. Garnish and Serve: Garnish with lemon slices and chopped parsley before serving.

Enjoy this creamy, flavorful dish that’s perfect for a quick weeknight dinner or a special occasion!

Notes

  1. Customize It: Add sautéed bell peppers, spinach, or cherry tomatoes for extra flavor and nutrition.
  2. Don’t Overcook the Pasta: Cook the linguine until al dente to avoid mushy pasta.
  3. Make Your Own Cowboy Butter: If you don’t have pre-made cowboy butter, mix softened butter with garlic, lemon zest, parsley, red pepper flakes, and a pinch of paprika.
  4. Adjust Spice Level: Reduce or increase the red pepper flakes to suit your taste.
