  • 2 cups (200g) penne pasta
  • 2 tbsp olive oil
  • 2 chicken breasts (about 1 lb), cubed
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for lighter option)
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • Salt & pepper to taste
  • ¼ cup fresh parsley, chopped (optional garnish)

Instructions

  1. Cook the Pasta:
    • Boil penne in salted water until al dente (about 10–12 minutes). Drain and set aside.
  2. Sauté the Chicken:
    • Heat olive oil in a large skillet over medium-high heat. Add chicken, season with Italian seasoning, salt, and pepper. Cook for 5–6 minutes until golden and cooked through. Remove and set aside.
  3. Steam the Broccoli:
    • In the same skillet, add broccoli and chicken broth. Cover and steam for 3–4 minutes until tender-crisp. Remove broccoli and set aside (keep broth in the pan).
  4. Make the Sauce:
    • Reduce heat to medium. Sauté garlic for 30 seconds until fragrant. Pour in heavy cream and simmer for 2 minutes. Stir in Parmesan until melted and smooth.
  5. Combine Everything:
    • Return chicken, broccoli, and pasta to the skillet. Toss to coat in the sauce. Cook for 1–2 minutes until heated through. Garnish with parsley.
