There’s something magical about the smell of warm pasta on a cozy evening. I first made this creamy Boursin Cheese Pasta for a family dinner years ago—it instantly became a favorite. 200g (7 oz) pasta (penne or fusilli work great)
1 pack (150g / 5 oz) Boursin Garlic & Herb cheese
1 tbsp olive oil
2 cloves garlic, minced
1 cup cherry tomatoes, halved
½ cup baby spinach (optional)
Salt and pepper to taste
Grated parmesan (optional for topping)
Boil the pasta according to package instructions. Save ½ cup of the pasta water before draining.
While pasta cooks, heat olive oil in a pan over medium heat. Add garlic and cherry tomatoes. Cook for 3–4 minutes until tomatoes soften.
Lower the heat and add the Boursin cheese to the pan. Stir gently until it melts into a creamy sauce.
Add the cooked pasta and a splash of reserved pasta water to thin the sauce if needed.
Stir in spinach if using. Cook for 1–2 more minutes until wilted.
Season with salt and pepper. Serve hot with grated parmesan on top.
