  • 4 whole wheat tortillas (like La Banderita Xtreme)
  • 1 cup refried beans
  • ⅔ cup shredded Colby Jack cheese
  • ⅓ cup red enchilada sauce
  • 2 small tomatoes, chopped
  • 2 green onions, chopped
  • Cooking spray (for frying tortillas)

Instructions

1️⃣ Preheat oven to 400°F (200°C).

2️⃣ Crisp the tortillas:

  • Heat a skillet or griddle over medium heat and lightly coat with cooking spray.
  • “Fry” each tortilla for 1-2 minutes per side, flipping frequently until golden and crispy. Set aside.

3️⃣ Assemble the pizzas:

  • Place 2 tortillas on a baking sheet.
  • Spread ½ cup warm refried beans on each.
  • Top with the remaining 2 tortillas (like a sandwich).

4️⃣ Add toppings:

  • Spread ½ of the enchilada sauce on each pizza.
  • Sprinkle chopped tomatoes, then cheese, and finally green onions.

5️⃣ Bake for 8-10 minutes until the cheese is melted and bubbly.
