Growing up, our Friday treat was always a trip to Taco Bell—my dad’s guilty pleasure was the Mexican Pizza. Now, I’ve recreated it at home, and it tastes even better. Crunchy, cheesy, and saucy—this Copycat Taco Bell Mexican Pizza is a guaranteed family favorite. Try it out for your next cozy night in!
1 lb ground beef
1 packet taco seasoning
½ cup water
8 small flour tortillas
1 can refried beans
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup enchilada sauce or mild taco sauce
Cooking oil spray
Optional toppings: diced tomatoes, sliced olives, green onions, sour cream
Preheat oven to 400°F (200°C).
In a skillet, cook ground beef until browned. Add taco seasoning and water. Simmer until thickened.
Lightly spray tortillas with oil and bake for 5–7 minutes on each side until crispy.
Spread refried beans on 4 tortillas, then add a layer of seasoned beef.
Top each with a second tortilla.
Spread sauce on top, sprinkle cheeses, and add optional toppings.
Bake for 8–10 minutes until cheese is melted and bubbly.
Slice into quarters and enjoy!
