  • 1/2 tsp red chili powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp oregano (or Italian seasoning)
  • 2 tbsp tomato paste
  • 1 tsp chili sauce or sriracha (optional, for a kick)
  • 130ml (1/2 cup + 1 tbsp) milk
  • 110ml (1/4 cup + 3 tbsp) double cream
  • 100g (1 cup) mozzarella cheese, shredded (+ extra for topping)
  • 100120ml (1/2 cup) pasta water

Instructions

  1. Boil the Pasta:
    • Cook the pasta in a pot of salted boiling water with a drizzle of oil until al dente (slightly firm). Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. Cook the Garlic:
    • Heat oil in a large pan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant and lightly golden.
  3. Cook the Chicken:
    • Add the chicken pieces to the pan and cook for 3-4 minutes, stirring occasionally, until the chicken turns white and is cooked through.
  4. Add Seasonings:
    • Sprinkle in salt, black pepper, red chili powder, garlic powder, paprika, onion powder, and oregano. Stir well to coat the chicken evenly.
  5. Incorporate Tomato Paste:
    • Add the tomato paste and chili sauce (if using). Cook for 1 minute, stirring constantly.
  6. Make the Sauce:
    • Gradually pour in the milk and cream, stirring continuously. Let the mixture simmer for 1-2 minutes until it starts to bubble.
  7. Add Cheese:
    • Stir in the shredded mozzarella cheese until melted and fully incorporated into the sauce.
  8. Adjust Consistency:
    • Gradually add the reserved pasta water, stirring until the sauce reaches your desired creamy consistency.
  9. Combine Pasta and Sauce:
    • Add the cooked pasta to the sauce and toss until evenly coated. Sprinkle extra cheese on top, cover the pan, and let it cook on low heat for 1-2 minutes until the cheese melts.
  10. Serve and Enjoy:
    • Serve hot, garnished with a sprinkle of herbs or extra cheese if desired.

Notes

  • Salt Adjustment: Be mindful of the salt, as the pasta water and cheese already add saltiness. Taste as you go!
  • Pasta Water: Start with 1/2 cup of pasta water and add more if needed to achieve the perfect sauce consistency.
