Growing up, the smell of caramel apples always meant fall was here. I remember holding my mom’s hand at the county fair, sticky fingers and all! Today, I’m sharing a simple, healthier twist on that beloved treat — Caramel Apple Date Bark. It’s a sweet, chewy, and crunchy delight that’s perfect for a cozy afternoon. Save this recipe for when you want a little bite of happiness!
1 cup Medjool dates, pitted
1/2 cup dried apple slices, chopped
1/3 cup unsweetened peanut butter (or almond butter)
2 tablespoons honey or maple syrup
1/4 cup crushed walnuts or pecans
1/4 cup white chocolate chips (optional for drizzle)
A pinch of sea salt
Line a small baking tray with parchment paper.
Flatten the pitted dates onto the tray, pressing them together like a base.
Warm the peanut butter and honey together slightly and drizzle over the dates.
Sprinkle chopped dried apples and nuts evenly on top.
Melt the white chocolate (if using) and drizzle it over everything for extra sweetness.
Lightly sprinkle sea salt to balance the flavors.
Freeze for about 30 minutes until firm, then cut into bark pieces.
Enjoy right away or store in the fridge for a quick treat!
Use soft, fresh dates for easier pressing.
For an extra fall flavor, sprinkle a tiny bit of cinnamon on top.
Keep it refrigerated to stay chewy and firm!
