Cabbage Roll Soup

Cabbage Roll Soup is a hearty, comforting dish that brings all the flavors of traditional cabbage rolls into a simple, easy-to-make soup. Perfect for chilly days, this recipe is packed with ground beef, cabbage, carrots, and rice, all simmered in a savory tomato broth. It’s a one-pot wonder that’s both nutritious and satisfying. Plus, it’s ready in under an hour!

Ingredients

Scale
  • 2 tsp. vegetable oil
  • 1 lb. lean ground beef
  • Salt and pepper (to taste)
  • 1 medium yellow onion, diced finely
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 (8 oz.) cans tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp. light brown sugar
  • 2 tbsp. fresh chopped parsley

Instructions

  1. Brown the Beef: In a Dutch oven or large soup pot, heat the vegetable oil over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned, breaking it into small pieces as it cooks.
  2. Add Aromatics: Stir in the diced onion and minced garlic. Cook for 2-3 minutes, or until the onions are tender and fragrant.
  3. Combine Ingredients: Add the chopped cabbage, carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar. Stir well to combine.
  4. Simmer: Bring the soup to a simmer, then reduce the heat to medium-low. Cover and let it cook for about 25 minutes, or until the rice is tender and the vegetables are soft.
  5. Finish: Remove the bay leaf and discard it. Sprinkle the soup with fresh chopped parsley before serving.

Notes

  1. Rice Tip: If you prefer a thicker soup, use 1 cup of rice instead of 1/2 cup.
  2. Vegetable Swap: Feel free to add other veggies like celery or bell peppers for extra flavor and nutrition.
  3. Make It Ahead: This soup tastes even better the next day as the flavors meld together. Store it in the fridge for up to 3 days.
  4. Freezer-Friendly: Freeze leftovers in an airtight container for up to 3 months. Reheat on the stovetop or in the microwave.
