These light, golden-brown Broccoli Fritters are a delightful vegetarian option for dinner or lunch. They are quick to prepare, taking less than 30 minutes, and are a hit with both adults and kids alike. Serve them warm with a side of yogurt or sour cream for a delicious and nutritious meal.

  • 1 lb. steamed broccoli florets
  • 2 jumbo eggs
  • ½ cup shredded Parmesan cheese
  • 4 tbsp. flour
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions

  1. Prepare the Broccoli:
    • Bring a medium-sized pot of salted water to a boil.
    • Add the broccoli florets and cook until fork-tender, about 5 minutes.
    • Drain well and transfer to a cutting board.
    • Chop the broccoli into very small pieces using a large, sharp knife.
  2. Mix the Ingredients:
    • In a medium-sized bowl, combine the chopped broccoli, eggs, Parmesan, flour, and minced garlic.
    • Season with salt and pepper to taste.
    • Stir until well combined.
  3. Cook the Fritters:
    • Heat a cast iron or non-stick pan over medium heat.
    • Add enough vegetable oil to coat the pan (less oil is needed for non-stick pans).
    • Scoop 2- to 3-tablespoon mounds of the broccoli mixture into the pan.
    • Flatten the mounds slightly with a spatula, spacing them about one inch apart.
    • Cook for 2 to 3 minutes, then flip and cook for an additional 1 to 2 minutes until golden brown and cooked through.
  4. Serve:
    • Serve the fritters warm with yogurt or sour cream.
