Ingredients

Scale
  • 23 cups chopped rotisserie chicken
  • 1 1/2 cups shredded Colby-Jack or Monterey Jack cheese
  • 1/2 cup thick and chunky salsa (mild, medium, or hot, depending on your preference)
  • 1/2 tsp salt
  • 1/2 tsp lemon pepper
  • 1/2 tsp cumin
  • 1/2 tsp dark chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 18 corn tortillas
  • Cooking spray
  • Assorted toppings (optional): sour cream, guacamole, salsa, diced tomato, queso fresco, shredded lettuce, chopped green onion, etc.

Instructions

  1. Preheat the oven:
Preheat your oven to 375°F (190°C). Liberally spray a large baking sheet with cooking spray and set aside.
  2. Prepare the filling:
In a medium-sized mixing bowl, combine the chopped chicken, shredded cheese, salsa, salt, lemon pepper, cumin, chili powder, garlic powder, and onion powder. Mix until everything is well combined.
  3. Warm the tortillas:
Wrap the corn tortillas in a damp paper towel and microwave for 10-15 seconds to soften them. This makes them easier to roll without cracking.
  4. Assemble the taquitos:
Place about 2-3 tablespoons of the chicken mixture onto each tortilla. Roll them up tightly, jelly-roll style, and place them seam-side down on the prepared baking sheet.
  5. Bake:
Spray the taquitos liberally with cooking spray to help them crisp up. Bake in the preheated oven for 20 minutes, or until they are lightly golden and heated through.
  6. Serve:
Remove from the oven and serve immediately with your favorite toppings, such as sour cream, guacamole, salsa, or diced tomatoes.

Notes

  1. Warm the tortillas: Heating the corn tortillas slightly before rolling prevents them from cracking.
  2. Don’t overfill: Use about 2-3 tablespoons of filling per tortilla to ensure they roll easily.
  3. Spray generously: Coating the taquitos with cooking spray helps them crisp up in the oven.
  4. Air fryer option: For an even crispier texture, try the air fryer method included in the notes.
  5. Toppings: Serve with sour cream, guacamole, salsa, or any of your favorite toppings for extra flavor.
