  • 1.5 lbs (700g) boneless, skinless chicken breasts, cut into 1.5-inch chunks
  • ¼ cup olive oil
  • ¼ cup lemon juice (freshly squeezed)
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • Wooden skewers (soaked in water for 30 mins)

Instructions

1. Marinate the Chicken

  • In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  • Add chicken chunks and toss well to coat.
  • Cover and refrigerate for at least 1 hour (or up to 24 hours for deeper flavor).

2. Assemble Skewers

  • Preheat grill (or grill pan) to medium-high heat.
  • Thread chicken, onion, and bell peppers onto soaked skewers, alternating pieces.

3. Grill the Souvlaki

  • Grill skewers for 8–10 minutes, turning occasionally, until chicken is fully cooked (internal temp: 165°F / 75°C) and veggies are slightly charred.

4. Serve

  • Remove from heat and let rest 2 minutes.
  • Serve with warm pita, tzatziki, and a squeeze of lemon.

Notes

✔ Marinate longer for more flavor – 1 hour minimum, but overnight is best.
✔ Soak wooden skewers for at least 30 minutes to prevent burning.
✔ Don’t overcrowd skewers – leave space for even cooking.
✔ Use high heat for a nice char while keeping the chicken tender.
