Ingredients

Scale
  • 12 oz pasta (penne or fettuccine works great)

  • 1 lb Italian sausage (mild or spicy)

  • 3 tbsp unsalted butter

  • 4 garlic cloves, minced

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • 1/2 cup pasta water (reserved)

  • Salt and black pepper to taste

  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining.

  2. In a large pan, cook the sausage over medium heat until browned and cooked through. Remove and set aside.

  3. In the same pan, melt butter and sautรฉ garlic until fragrant (about 1 minute).

  4. Lower the heat and stir in the cream. Simmer for 2 minutes.

  5. Add Parmesan, stirring until melted into a smooth sauce.

  6. Return sausage to the pan, then add cooked pasta. Mix well.

  7. If needed, add reserved pasta water a bit at a time until the sauce coats the pasta perfectly.

  8. Season with salt and pepper. Garnish with fresh parsley.

Notes

  • Use Fresh Garlic: It gives the sauce a deep, rich flavor that jarred garlic canโ€™t match.

  • Brown the Sausage Well: Let it caramelize a bit in the panโ€”thatโ€™s where the flavor magic begins!

  • Donโ€™t Overcook the Pasta: Al dente pasta holds up better when tossed with sauce.

  • Save That Pasta Water: The starch in it helps the sauce cling to the noodles like a warm hug.

  • Freshly Grated Parmesan Only: Pre-shredded cheese has anti-caking agents that can make your sauce grainy.

  • Want a Twist? Add spinach or sun-dried tomatoes for extra flavor and color.

  • Serving Suggestion: Pair with garlic bread and a light salad for a complete, cozy meal.
