Ingredients

  • 250g pasta (spaghetti or linguine work great)

  • 2 tbsp olive oil

  • 4 cloves garlic, thinly sliced

  • 300g mushrooms (button or cremini), sliced

  • 1/4 tsp red chili flakes (optional)

  • Salt and pepper to taste

  • 1/2 cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)

  • 1/2 cup reserved pasta water

Instructions

  • Cook pasta in salted water according to package instructions. Reserve ½ cup of pasta water before draining.

  • In a large pan, heat olive oil over medium heat. Add garlic and sauté gently until fragrant, about 1 minute.

  • Add mushrooms and cook until golden and tender, about 7-8 minutes.

  • Season with salt, pepper, and chili flakes if using.

  • Add cooked pasta to the pan, mix well. Stir in reserved pasta water a little at a time to loosen the sauce.

  • Sprinkle with Parmesan and parsley before serving.

Notes

  • Use fresh garlic for the best flavor.

  • Don’t rush the mushrooms – let them brown for a rich, earthy taste.

  • Want more protein? Add grilled chicken or shrimp.

  • Add a splash of lemon juice at the end for brightness.
