These flaky, golden Breakfast Puff Pastry Bars are packed with all the breakfast goodness—sausage, eggs, hash browns, bacon, and cheese—all in one delicious bite. 2 puff pastry sheets
8 oz ground sausage
¼ cup flour
¼ cup milk (plus more as needed)
1 tsp black pepper
1½ cups frozen shredded hash browns
1 egg
2 tbsp heavy cream
4 slices Havarti or cheddar cheese
4–6 oz bacon
½ cup shredded cheddar cheese
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Cook sausage in a pan until browned. Add flour to make a roux, then stir in milk and pepper. Adjust thickness by adding more milk if needed. Set aside.
Prepare bacon however you like—air fryer, stovetop, or microwave. Crumble once done.
Fry hash browns until golden and crispy. Use minimal oil to avoid sogginess.
Mix egg and cream in a bowl. Set aside.
Assemble the bars:
Lay 1 puff pastry sheet on baking tray.
Layer sausage gravy, hash browns, half the egg mixture, cheese slices, bacon, and shredded cheese.
Top with second puff pastry, seal edges with a fork, brush with egg wash.
Bake for 18–23 mins until golden brown. Let cool slightly, then slice into 9 bars.
Thaw the Puff Pastry Properly
Let the pastry sheets thaw in the fridge overnight or for 30–40 minutes at room temperature. Cold but pliable pastry works best!
Keep the Edges Clear
Leave about an inch of space around the edges when layering the filling to ensure the pastry seals properly and puffs up beautifully.
Dry Hash Browns = Crispy Bars
Make sure to cook the hash browns until golden and dry—this keeps the inside of the bars from getting soggy.
Thicker Gravy, Better Layers
A drier sausage gravy helps hold everything together and makes cutting much cleaner. Add milk sparingly.
