Ingredients

Scale
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 34 cloves garlic, minced
  • 1 lb lean ground beef
  • 1.5 tbsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 jar (24 oz) marinara sauce (Rao’s recommended)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • ¼ cup water
  • 10 oz lasagna noodles, broken into halves
  • 1 ½ cups cottage cheese
  • ½ cup shaved parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 cup spinach, chopped

Optional Garnish:

  • ½ cup cottage cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. Sauté Aromatics:
In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and garlic, sautéing for 3-4 minutes until fragrant.
  2. Cook Ground Beef:
Add the ground beef to the pot, breaking it apart with a meat masher or spoon. Cook for 4-6 minutes until browned.
  3. Add Seasonings:
Stir in Italian seasoning, salt, pepper, and tomato paste. Mix well to coat the beef and onions.
  4. Simmer the Soup:
Pour in beef broth, marinara sauce, water, and diced tomatoes (with juices). Stir to combine.
  5. Cook the Noodles:
Break lasagna noodles in half and add them to the pot. Make sure they’re submerged in the liquid. Cover the pot and let it boil for 12-15 minutes, stirring occasionally to prevent sticking.
  6. Add Cheese and Spinach:
Stir in cottage cheese, parmesan, mozzarella, and chopped spinach. Let the soup simmer for a few more minutes until the spinach wilts and the cheese melts.
  7. Serve:
Ladle the soup into bowls and top with a dollop of cottage cheese and fresh basil if desired. Enjoy warm!

Notes

  • Stir the Noodles: Lasagna noodles can stick together, so stir the soup occasionally while they cook.
  • Cottage Cheese: Use small-curd cottage cheese for the best texture.
  • Storage: Store leftovers in an airtight container in the fridge for 3-4 days. Reheat on the stovetop or in the microwave.
