3 ripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
For the Snickerdoodle Topping:
2 tbsp granulated sugar
1 tsp cinnamon
Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment.
In a large bowl, mix mashed bananas with melted butter.
Add sugar, egg, and vanilla. Mix well.
Stir in flour, baking soda, salt, and cinnamon until just combined.
Pour the batter into the loaf pan.
In a small bowl, mix topping ingredients. Sprinkle evenly over the batter.
Bake for 50–60 minutes or until a toothpick comes out clean.
