Every summer, my grandmother would prepare a beautiful Mediterranean dip for our family gatherings. The colors, the flavors, the love — it was the star of the table. Today, I’m sharing this bright and healthy recipe that brings people together. Try it for your next gathering and watch it disappear in minutes!
1 cup hummus (store-bought or homemade)
1/2 cup diced cucumber
1/2 cup diced tomatoes
1/4 cup crumbled feta cheese
1/4 cup sliced black olives
2 tablespoons chopped red onion
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
1 teaspoon lemon juice
Salt and pepper to taste
Pita chips or fresh veggies for serving
Spread the hummus evenly in a shallow serving dish.
Layer the cucumber, tomatoes, feta cheese, black olives, and red onion on top.
Drizzle with olive oil and lemon juice.
Sprinkle with fresh parsley, salt, and pepper.
Serve immediately with pita chips or fresh veggies, or cover and refrigerate until ready to enjoy!
Use Fresh Ingredients: The fresher your veggies and herbs, the brighter and tastier your dip will be.
Drain Vegetables Well: Cucumbers and tomatoes can release water. Pat them dry with a paper towel before adding to avoid a watery dip.
Add a Kick: Sprinkle a little crushed red pepper or a dash of za’atar spice for an extra flavor boost.
Make It Ahead: Letting the dip chill for an hour before serving allows the flavors to blend beautifully.
Customize It: Add roasted red peppers, artichoke hearts, or even a few sun-dried tomatoes for your own special twist.
Serve with Variety: Offer pita chips, carrot sticks, cucumber slices, or even endive leaves for dipping.
Keep It Cool: If serving outdoors, place your serving dish over a bowl of ice to keep it fresh and safe.
