Ingredients

Scale
  • 1 1/2 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon olive oil
  • Fresh parsley (optional, for garnish)

Instructions

  1. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer the beef to the slow cooker.
  2. Add Potatoes: Place the halved baby potatoes in the slow cooker with the beef.
  3. Prepare Garlic Butter Sauce: In a small bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes.
  4. Add Broth: Pour the beef broth into the slow cooker.
  5. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
  6. Serve: Garnish with fresh parsley if desired, and serve warm.

Notes

  • For extra tenderness, marinate the beef in the garlic butter mixture for 30 minutes before cooking.
  • If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last 30 minutes of cooking.
  • Customize the dish by adding vegetables like carrots, mushrooms, or bell peppers.
