Roasted Summer Italian Burger

Every summer, my uncle would fire up the grill and craft burgers that were anything but ordinary. This Roasted Summer Italian Burger brings back those delicious afternoons—with juicy beef, sun-dried tomatoes, and melty mozzarella, it’s Italy in a bun! It’s a burger with a little love and a lot of flavor. Make it a family favorite tonight!

Ingredients

  • 1 lb ground beef (85% lean)

  • ¼ cup chopped sun-dried tomatoes (in oil, drained)

  • 2 tablespoons grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • Salt and black pepper to taste

  • 4 slices fresh mozzarella cheese

  • 4 burger buns (toasted)

  • Handful of arugula or spinach

  • 4 slices roasted red bell peppers (jarred or homemade)

  • 2 tablespoons pesto (optional)

Instructions

  1. Preheat your grill or skillet over medium heat.

  2. In a bowl, mix ground beef, sun-dried tomatoes, Parmesan, garlic powder, oregano, salt, and pepper.

  3. Shape into 4 patties.

  4. Grill or pan-cook for 4–5 minutes on each side, until cooked to your liking.

  5. In the last minute, place mozzarella on top of patties to melt.

  6. Spread pesto on bottom buns (if using), then layer arugula, the burger, roasted pepper, and top bun.

  7. Serve hot with a side of roasted potatoes or a fresh salad.

Notes

  • Add a touch of balsamic glaze on top for a gourmet finish.

  • Ground turkey or plant-based patties work great too.

  • Toasting the buns adds a lovely crunch and flavor.
