Pineapple Jalapeño Slaw

This Pineapple Jalapeño Slaw takes me back to summer picnics with my cousins, where every dish had a little surprise. This slaw is just that—refreshing, crunchy, and bursting with sweet pineapple and a touch of jalapeño heat. It’s the perfect sidekick for tacos, grilled meats, or as a light, stand-alone salad. One bite, and you’ll be hooked!

Ingredients

  • 2 cups shredded green cabbage

  • 1 cup shredded purple cabbage (optional for color)

  • 1 cup fresh pineapple, diced

  • ½ jalapeño, finely chopped (adjust to taste)

  • ¼ cup red onion, thinly sliced

  • 2 tbsp chopped fresh cilantro

  • Juice of 1 lime

  • 1 tbsp olive oil or avocado oil

  • Salt & pepper to taste

  • Optional: ½ tsp honey for a hint of sweetness

Instructions

  • In a large bowl, combine both cabbages, pineapple, jalapeño, onion, and cilantro.

  • In a small bowl, whisk lime juice, olive oil, salt, pepper, and honey (if using).

  • Pour the dressing over the slaw and toss until evenly coated.

  • Chill for 15–30 minutes before serving to enhance the flavors.

Notes

  • Add a handful of chopped mango for a fruitier twist.

  • Want it creamier? Stir in 1 tbsp of Greek yogurt.

  • Great with pulled pork, grilled fish, or veggie tacos!
