This Pineapple Jalapeño Slaw takes me back to summer picnics with my cousins, where every dish had a little surprise. This slaw is just that—refreshing, crunchy, and bursting with sweet pineapple and a touch of jalapeño heat. It’s the perfect sidekick for tacos, grilled meats, or as a light, stand-alone salad. One bite, and you’ll be hooked!
2 cups shredded green cabbage
1 cup shredded purple cabbage (optional for color)
1 cup fresh pineapple, diced
½ jalapeño, finely chopped (adjust to taste)
¼ cup red onion, thinly sliced
2 tbsp chopped fresh cilantro
Juice of 1 lime
1 tbsp olive oil or avocado oil
Salt & pepper to taste
Optional: ½ tsp honey for a hint of sweetness
In a large bowl, combine both cabbages, pineapple, jalapeño, onion, and cilantro.
In a small bowl, whisk lime juice, olive oil, salt, pepper, and honey (if using).
Pour the dressing over the slaw and toss until evenly coated.
Chill for 15–30 minutes before serving to enhance the flavors.
Add a handful of chopped mango for a fruitier twist.
Want it creamier? Stir in 1 tbsp of Greek yogurt.
