32 frozen potato rounds (like Ore-Ida® Crispy Crowns®)
2 tablespoons vegetable oil
8 oz ground beef (85% lean)
¼ pinch kosher salt
¼ teaspoon black pepper
4 slices American cheese
1 tablespoon ketchup (or to taste)
1 tablespoon mustard (or to taste)
16 pickled gherkins, drained
16 toothpicks
Preheat oven to 450°F (230°C).
Toss frozen potato rounds with oil and spread in a single layer on a baking sheet.
Bake for 15–18 minutes, flipping once, until golden and crisp.
Flatten ground beef between two wax papers into a 4×6-inch rectangle. Remove the top sheet, season with salt and pepper, and cut into 16 small rectangles.
Break cheese slices into quarters, fold each to make double-layered pieces.
Cook beef in a skillet on medium heat for 3 minutes per side. Add cheese and cover to melt.
Stack: 1 potato round, burger with cheese, ketchup, mustard, pickle, and another potato round on top. Secure with a toothpick.
Repeat to make 16 sliders.
