  • 170g butter (room temperature)
  • 200g light brown sugar
  • 80g caster sugar
  • 250g plain flour
  • 150g white chocolate chips
  • 1 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract

Caramel Layer:

  • 150g butter
  • 150g light brown sugar
  • 1 tsp vanilla extract
  • 1 tin condensed milk (397g)
  • 2 tbsp golden syrup

Chocolate Layer:

  • 300g white chocolate
  • Mini eggs (as many as you like!)

Instructions

Blondie Layer:

  1. Preheat your oven to 180°C (160°C fan). Line an 8×8 inch tin with baking paper.
  2. In a bowl, whisk the softened butter and both sugars until light and fluffy.
  3. Add the eggs one at a time, whisking well after each addition.
  4. Mix in the vanilla extract.
  5. Gently fold in the sieved flour and salt until just combined. Avoid overmixing.
  6. Stir in the white chocolate chips.
  7. Spread the batter evenly into the prepared tin and smooth the top.
  8. Bake for 32-35 minutes, depending on how gooey you like your blondies.
  9. Let the blondies cool completely, then refrigerate until cold.

Caramel Layer:

  1. Combine all the caramel ingredients in a saucepan over medium heat.
  2. Stir constantly with a spatula to prevent burning.
  3. Once the mixture comes to a boil, let it bubble for 5 minutes while stirring. It will thicken and darken.
  4. Pour the hot caramel over the cooled blondies and spread evenly.
  5. Refrigerate until the caramel layer is set.

Chocolate Layer:

  1. Melt the white chocolate and pour it over the cooled caramel layer.
  2. Decorate with mini eggs (whole and crushed) while the chocolate is still soft.
  3. Refrigerate until the chocolate is firm.
  4. Use a hot, sharp knife to cut into 16 squares.
