2 cups elbow macaroni
1 cup cooked corn kernels
1 red bell pepper, diced
1/2 red onion, finely chopped
1 cup black beans, rinsed and drained
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons lime juice
1 teaspoon chili powder
1 teaspoon cumin
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Cook the macaroni according to package instructions. Drain and rinse under cold water.
In a large bowl, mix together the macaroni, corn, bell pepper, onion, and black beans.
In a smaller bowl, whisk the mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and pepper.
