Ingredients

Scale
  • 2 cups cooked chopped chicken (Note 1)
  • 6 slices cooked bacon, crumbled (Note 2)
  • 1 large avocado, chopped
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup thinly sliced scallions (Note 3)
  • 3/4 cup diced celery (Note 4)
  • 1/4 cup Caesar dressing (Note 5)
  • Table salt and ground black pepper, to taste

Instructions

  1. Combine Ingredients: In a large salad bowl, add the cooked chicken, crumbled bacon, chopped avocado, shredded cheddar cheese, sliced scallions, and diced celery.
  2. Add Dressing: Pour the Caesar dressing over the ingredients.
  3. Toss & Season: Gently toss everything together until well-mixed. Season with salt and pepper to taste. Add extra dressing if desired.
  4. Serve or Store: Serve immediately for the best texture, or store leftovers in an airtight container in the refrigerator for up to 1 day.

Notes

  1. Chicken: Use rotisserie chicken for convenience, or cook and shred your own chicken breast or thighs.
  2. Bacon: Cook bacon until crispy for the best texture. You can bake it in the oven for even cooking.
  3. Scallions: Substitute with red onions or chives if preferred.
  4. Celery: Adds a nice crunch, but you can omit it if you’re not a fan.
  5. Dressing: Use store-bought Caesar dressing or make your own for a fresher taste.
  6. Seasoning: Taste before adding extra salt, as bacon and cheese are already salty.
  7. Serving: Serve with a side of crusty bread, crackers, or over a bed of greens.
  8. Storage: If storing leftovers, add avocado just before serving to prevent browning.
