Instructions

  1. Preheat the oven to 400°F (200°C). Spray a large baking pan with non-stick spray.
  2. Prepare the potatoes: Slice the potatoes into 1/4-inch thick rounds. Place them in a large mixing bowl and toss with olive oil, onion powder, dried thyme, and Cajun seasoning (if using).
  3. Arrange the potatoes: Spread the potato slices in a single layer on the prepared baking pan. Use two 13×9-inch cookie sheets or one large jelly roll pan if needed.
  4. Bake: Bake for 20 minutes, then flip the slices and bake for another 20 minutes, or until crispy and tender.
  5. Layer the toppings: Switch the oven to broil. Transfer the baked potato slices to an oven-safe skillet or casserole dish. Layer the potatoes with shredded cheese, bacon, and green onions. Repeat until all potatoes and toppings are used.
  6. Broil: Place the skillet or dish back in the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  7. Serve: Remove from the oven and serve immediately with a dollop of sour cream on top.
