Growing up, my family made this Herb Butter Beef Tenderloin Roast every special occasion — the rich, savory aroma filling the house was enough to bring everyone running to the table. It’s a simple yet elegant recipe that brings joy to any gathering. It’s easier than you think, and I’m excited to share this beloved tradition with you. Gather your loved ones, light some candles, and let’s make memories!
1 whole beef tenderloin roast (about 4–5 pounds)
1/2 cup unsalted butter, softened
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
1 tablespoon fresh parsley, chopped
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons olive oil
Preheat your oven to 450°F (230°C).
In a bowl, mix the butter, garlic, rosemary, thyme, parsley, salt, and pepper.
Pat the beef tenderloin dry with paper towels.
Rub the herb butter generously all over the roast.
Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin for 2-3 minutes on each side until browned.
Transfer the tenderloin to a roasting pan.
Roast in the oven for 25-30 minutes for medium-rare (internal temperature of 135°F/57°C).
Remove from the oven and cover loosely with foil. Let it rest for 15 minutes before slicing.
✅ Bring to Room Temperature:
Take the beef out of the fridge about 1 hour before cooking. This helps it cook evenly from edge to center.
✅ Don’t Skip Searing:
A quick sear in a hot pan locks in juices and gives the roast a beautiful, flavorful crust.
✅ Use a Meat Thermometer:
For perfect doneness, check the internal temperature!
135°F (57°C) for medium-rare
145°F (63°C) for medium
✅ Let It Rest:
After roasting, cover the beef lightly with foil and let it rest for 15 minutes. This keeps the meat juicy and tender.
