4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 teaspoon garlic powder
Salt and pepper to taste
2 medium tomatoes, finely diced
1 clove garlic, minced
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh basil
½ cup shredded mozzarella or shaved Parmesan (optional)
Preheat your grill to medium-high heat.
Rub chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper.
Grill chicken for 6-7 minutes on each side or until cooked through and golden.
