  • 12 large baking potatoes
  • 1 block (200g) feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup (20g) fresh basil, shredded

Instructions

  1. Preheat Oven: Set your oven to 200°C (390°F).
  2. Prepare Potatoes: Wash and cube the potatoes into small, even pieces. Place them in a baking dish.
  3. Season Potatoes: Add thyme, oregano, salt, pepper, and 1 tbsp olive oil to the potatoes. Toss to coat evenly.
  4. Add Feta and Garlic: Place the feta block in the center of the tray. Dip one side in the seasonings, then flip it over. Add the garlic head and half the lemon quarters to the tray. Drizzle the remaining olive oil over everything.
  5. Bake: Bake for 45-55 minutes, or until the potatoes are crispy and golden. Remove the garlic after 35 minutes to prevent burning.
  6. Prepare Garlic: Squeeze the roasted garlic cloves out of their skins and mash them with a sharp knife.
  7. Combine: Stir the mashed garlic, juice from the remaining lemon, and fresh basil into the potatoes. Gently mix the potatoes with the baked feta.
  8. Finish: Drizzle honey over the dish and sprinkle with shredded basil.
  9. Serve: Enjoy warm as a side dish or a light main course!
