Ingredients

Scale
  • 1 lb ground chicken

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs

  • 1 egg

  • 3 cloves garlic, minced

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup milk

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon Italian seasoning

  • Optional: extra Parmesan for topping

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, mix ground chicken, Parmesan, breadcrumbs, egg, garlic, parsley, milk, salt, pepper, and Italian seasoning until just combined.

  3. Divide the mixture into 4-6 mini meatloaves and place them on a greased baking sheet.

  4. Sprinkle extra Parmesan on top if desired.

  5. Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).

  6. Let rest for 5 minutes before serving.

Tip: For extra juiciness, don’t overmix the meat! Gently fold everything together.

Notes

  • Use fresh garlic: It gives a deeper, richer flavor compared to garlic powder.

  • Don’t overmix: Gently combine the ingredients to keep the meatloaves tender and juicy.

  • Shape evenly: Make your mini meatloaves the same size so they cook evenly.

  • Add a little moisture: If the mix feels dry, add a splash more milk to keep them soft.

  • Customize the flavor: Feel free to mix in chopped spinach, shredded carrots, or even a pinch of red pepper flakes for a little heat!
