One dish that always made everyone smile was these Garlic Parmesan Chicken Meatloaves. They’re a lighter twist on a classic, full of rich flavor and comfort. Try it tonight and bring a little extra love to your table!
1 lb ground chicken
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 egg
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
Optional: extra Parmesan for topping
Preheat your oven to 375°F (190°C).
In a large bowl, mix ground chicken, Parmesan, breadcrumbs, egg, garlic, parsley, milk, salt, pepper, and Italian seasoning until just combined.
Divide the mixture into 4-6 mini meatloaves and place them on a greased baking sheet.
Sprinkle extra Parmesan on top if desired.
Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
Let rest for 5 minutes before serving.
Tip: For extra juiciness, don’t overmix the meat! Gently fold everything together.
Use fresh garlic: It gives a deeper, richer flavor compared to garlic powder.
Don’t overmix: Gently combine the ingredients to keep the meatloaves tender and juicy.
Shape evenly: Make your mini meatloaves the same size so they cook evenly.
Add a little moisture: If the mix feels dry, add a splash more milk to keep them soft.
Customize the flavor: Feel free to mix in chopped spinach, shredded carrots, or even a pinch of red pepper flakes for a little heat!
