Bottom Layer:

  • ½ cup pomegranate juice
  • ½ cup pineapple juice
  • 1 ¼ envelopes Knox gelatin (1/4 envelope = about 1/2 teaspoon gelatin powder)

Top Layer:

  • 2 cups white peach cranberry juice cocktail
  • 2 ½ envelopes Knox gelatin (1/2 envelope = about 1 teaspoon gelatin powder)
  • ½ cup maraschino cherries with stems
  • ¼ cup sprinkles

Instructions

  1. Prepare the Mold:
    • Lightly spray a silicone mold with cooking oil and wipe clean with a paper towel. Place the mold on a cookie sheet for stability.
  2. Prepare the Cherries:
    • Cut the bottom off each cherry so they stand upright. Place them on a paper towel to drain excess liquid.
  3. Make the Bottom Layer:
    • In a saucepan, combine pomegranate juice, pineapple juice, and gelatin. Let the gelatin soak for a few minutes.
    • Heat over very low heat, stirring constantly, until the gelatin dissolves (about 5 minutes). Remove from heat.
    • Fill each mold cavity 1/3 full with the mixture. Refrigerate until set (30 minutes to 1 hour).
  4. Make the Top Layer:
    • In a saucepan, combine white peach cranberry juice and gelatin. Let the gelatin soak for a few minutes.
    • Heat over very low heat, stirring constantly, until the gelatin dissolves (about 5 minutes). Remove from heat and let cool for 10-15 minutes.
  5. Assemble the Jigglers:
    • Remove the molds from the refrigerator. Place a cherry in each mold.
    • Carefully spoon the cooled top layer mixture over the cherries, filling each mold to the top.
  6. Chill and Serve:
    • Refrigerate for several hours or overnight until fully set.
    • Add sprinkles before serving for a festive touch.

  • Use 100% fruit juice for a healthier option.
  • Let the gelatin mixture cool slightly before pouring it over the cherries to prevent them from floating.
  • For a quicker set, place the molds in the freezer for 15-20 minutes (but don’t let them freeze!).
