Easy Marinated Tomatoes

When I was young, my grandmother would pluck sun-warmed tomatoes right from the garden and toss them with simple herbs and oil. It was our little summer secret. This recipe brings back those sweet memories with a fresh and easy twist you’ll love. Give it a try – it’s perfect for warm days and makes any meal feel special.

Ingredients

  • 4 ripe tomatoes, sliced

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 2 garlic cloves, minced

  • 1 teaspoon dried oregano (or fresh if you have!)

  • Salt and pepper to taste

  • Fresh basil for garnish (optional)

Instructions

  • Slice the tomatoes and place them in a shallow bowl or dish.

  • In a small bowl, mix olive oil, vinegar, minced garlic, oregano, salt, and pepper.

  • Pour the marinade over the tomatoes. Make sure each slice is coated.

  • Cover and let marinate in the fridge for at least 30 minutes, or up to 2 hours.

  • Before serving, bring to room temperature and top with fresh basil if desired.

Notes

  • Use different types of tomatoes for a colorful dish – cherry, heirloom, or beefsteak!

  • Great as a side dish, on toast, or mixed into salads.

  • Add crumbled feta or mozzarella for extra flavor.
