4 ripe tomatoes, sliced
2 tablespoons olive oil
1 tablespoon red wine vinegar
2 garlic cloves, minced
1 teaspoon dried oregano (or fresh if you have!)
Salt and pepper to taste
Fresh basil for garnish (optional)
Slice the tomatoes and place them in a shallow bowl or dish.
In a small bowl, mix olive oil, vinegar, minced garlic, oregano, salt, and pepper.
Pour the marinade over the tomatoes. Make sure each slice is coated.
Cover and let marinate in the fridge for at least 30 minutes, or up to 2 hours.
Before serving, bring to room temperature and top with fresh basil if desired.
Use different types of tomatoes for a colorful dish – cherry, heirloom, or beefsteak!
Great as a side dish, on toast, or mixed into salads.
Add crumbled feta or mozzarella for extra flavor.
