3 Ingredient PB Fit Peanut Butter Easter Eggs

Easter is a time for sweet treats, and these homemade peanut butter eggs bring all the joy—without the guilt!  My grandma used to make peanut butter eggs every Easter, and I wanted to create a healthier twist with PB Fit powder. These little delights are protein-packed, naturally sweetened, and coated in rich chocolate! The best part? You only need 3 simple ingredients to make them.  Try them out and make this Easter extra special!

(Makes 8 Easter eggs)

  • 1 ½ cups powdered peanut butter (like PB Fit or PB2)
  • ⅓ cup unsweetened applesauce (or 4 oz)
  • ½ cup chocolate chips, melted

Instructions

  1. Mix the Filling:
    In a bowl, combine 1 ¼ cups of powdered peanut butter with the applesauce. Mix until smooth.

    • For a thicker, fudgier texture, add the remaining ¼ cup of powdered peanut butter.
    • For a creamier texture, use the mixture as is.
  2. Shape the Eggs:
    Divide the dough into 8 equal pieces. Roll each piece into a ball, then gently flatten it into an egg shape.

    • Tip: If the mixture is too soft, refrigerate it for 10-15 minutes to make it easier to shape.
  3. Chill the Eggs:
    Place the shaped eggs in the fridge or freezer for 15-20 minutes, or until firm.
  4. Melt the Chocolate:
    While the eggs chill, melt the chocolate chips in the microwave in 20-second intervals, stirring between each burst until smooth.
  5. Coat the Eggs:
    Dip each peanut butter egg into the melted chocolate, ensuring it’s fully coated. Place on a parchment-lined tray.

    • Optional: Drizzle extra chocolate on top for a decorative touch.
  6. Set the Chocolate:
    Let the chocolate harden at room temperature or in the fridge for 10-15 minutes.
  7. Enjoy!
    Serve and store any leftovers in an airtight container in the fridge for up to a week.
