6 large egg whites (room temperature)
1 tsp fresh lemon juice
¼ tsp kosher salt
¼ cup sugar
½ cup + 1 tbsp cake flour
Pastel gel food coloring
8 oz cream cheese (softened)
½ cup unsalted butter (softened)
1 cup powdered sugar
1 tsp pure vanilla extract
Powdered sugar for dusting
Preheat oven to 350°F. Grease a 13×18-inch baking sheet and line it with parchment paper.
In a stand mixer, beat egg whites, lemon juice, and salt until foamy. Gradually add sugar and mix until soft peaks form.
Gently fold in cake flour until smooth.
Divide batter into 4 bowls, adding a few drops of pastel food coloring to each. Mix to achieve your desired shades.
Drop dollops of each color onto the parchment-lined sheet and spread evenly with a spatula.
Bake for 12 minutes, until the cake springs back when touched.
Let cool for 5 minutes, then flip onto a fresh sheet of parchment paper. Roll the cake while warm and refrigerate for a few hours.
Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
Unroll the cake, spread the frosting evenly, and roll it back up.
