1 cup uncooked long-grain white rice
1 ½ cups chicken broth
1 lb boneless, skinless chicken thighs or breasts, chopped
1 cup tzatziki sauce (store-bought or homemade)
½ cup cherry tomatoes, halved
½ red onion, thinly sliced
½ tsp dried oregano
Salt and pepper to taste
