Cucumber Strawberry Salad: A Refreshing Summer Delight

Cucumber Strawberry Salad

When we needed something light and lovely on hot afternoons, my aunt would toss together this bright cucumber and strawberry salad — a little sweet, a little tangy, and always made with love. It’s a refreshing mix that tastes like sunshine in a bowl. Whether you’re serving lunch or a summer picnic, this salad is a joy to share.

Ingredients

Scale
  • 2 cups strawberries, sliced

  • 1 large cucumber, thinly sliced or chopped

  • 2 tbsp red onion, thinly sliced (optional)

  • 1 tbsp fresh mint or basil, chopped

  • 1 tbsp honey or maple syrup

  • 1 tbsp fresh lime or lemon juice

  • Pinch of salt

  • Optional: 2 tbsp crumbled feta cheese or goat cheese

  • Optional: sprinkle of black pepper or Tajín for a little kick

Instructions

  • Prepare Produce: Wash and slice strawberries and cucumber. Thinly slice onion if using.

  • Mix Dressing: In a small bowl, whisk honey and lime juice with a pinch of salt.

  • Toss Salad: In a large bowl, combine strawberries, cucumber, and herbs. Drizzle with dressing and toss gently.

  • Add Extras: Top with crumbled cheese and a sprinkle of pepper or Tajín if desired.

  • Serve Cold: Chill for 10–15 minutes before serving for best flavor.

Notes

  • Use English cucumber or peel regular cucumbers for better texture.

  • Add avocado or walnuts for a heartier salad.

  • Feta adds a salty contrast to the sweetness — great for balance!

  • Double the recipe for gatherings — it disappears fast!
