For Bunny Ears:

  • 1 package white melting wafers or candy melts
  • Bunny ears printable template
  • Zip-top plastic bags
  • Decorating bag with a small round tip

For Frosting:

  • 1 cup white chocolate chips
  • 1 (8-ounce) package cream cheese, at room temperature
  • 4 tablespoons unsalted butter, at room temperature
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract

For Assembly:

  • 1 (7-ounce) package shredded coconut

Instructions

1. Prepare Cupcakes:

  1. Preheat your oven according to the cake mix instructions.
  2. Prepare the cake mix as directed on the box, making 24 cupcakes.
  3. Bake the cupcakes and let them cool completely on a wire rack before frosting.

2. Prepare Bunny Ears:

  1. Melt half of the white melting wafers in a small bowl according to the package instructions.
  2. Transfer the melted candy to a decorating bag fitted with a small round tip.
  3. Slide the bunny ears printable template into a zip-top bag.
  4. Trace the bunny ears with the melted candy, then fill them in completely. Carefully remove the template from the bag.
  5. Place the bag on a flat surface and freeze the ears until firm. Repeat until you have enough ears for all cupcakes.

3. Prepare Frosting:

  1. Melt the white chocolate chips in a microwave-safe bowl, heating in 20-second intervals and stirring until smooth. Set aside.
  2. In a stand mixer, combine the cream cheese and butter. Mix until smooth and lump-free.
  3. Add the powdered sugar and vanilla extract. Mix until fully combined and creamy, scraping down the sides as needed.
  4. Add the melted white chocolate to the cream cheese mixture and mix until well combined.

4. Assemble Cupcakes:

  1. Spread half of the shredded coconut on a small plate.
  2. Frost the cooled cupcakes, ensuring the frosting reaches the edges.
  3. Roll the frosted cupcakes in the shredded coconut, adding more coconut to the plate as needed.
  4. Gently press two bunny ears into the top of each cupcake.
  5. Refrigerate the cupcakes until ready to serve.

Notes

  • For a shortcut: Use store-bought frosting instead of making your own.
  • Add color: Tint the coconut with a few drops of food coloring for pastel-colored bunnies.
