1 bunch asparagus, trimmed
4 slices bacon, cooked and crumbled
2 tablespoons olive oil
Salt and pepper to taste
¼ cup crumbled blue cheese
Optional: chopped fresh parsley for garnish
Preheat oven to 400°F (200°C).
Place asparagus on a baking sheet and drizzle with olive oil. Season with salt and pepper. Toss to coat.
Roast for 15–18 minutes, until tender and slightly crisp.
Remove from oven and sprinkle with crumbled bacon and blue cheese.
Return to oven for 2–3 minutes, just until the cheese softens.
Garnish with parsley if desired and serve warm.
Use thick-cut bacon for a heartier bite.
