French Onion Soup Salad

Inspired by cozy French bistros and rainy day comfort food, this French Onion Soup Salad brings all the rich, savory flavors of the beloved classic—without the pot or the wait. It’s a crisp, warm, and cheesy twist that Grandma would’ve called “genius.” Add it to your dinner table and watch it disappear fast!

Ingredients

  • 2 large yellow onions, thinly sliced

  • 1 tbsp olive oil

  • 1 tsp balsamic vinegar

  • Salt & pepper to taste

  • 6 cups mixed greens (arugula, romaine, or your favorite)

  • 1/2 cup croutons

  • 1/2 cup shredded Gruyère or Swiss cheese

  • 1 tbsp fresh thyme (optional)

For the Dijon Dressing:

  • 2 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp red wine vinegar

  • 1 tsp honey

  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a pan on medium-low. Add onions and cook slowly (15–20 mins), stirring often until golden and caramelized.

  2. Add balsamic vinegar to onions, season with salt and pepper, and cook another minute. Set aside.

  3. In a small bowl, whisk dressing ingredients until smooth.

  4. In a large salad bowl, toss greens with half the dressing.

  5. Add warm onions, croutons, and shredded cheese. Drizzle remaining dressing.

  6. Sprinkle with thyme and serve while the onions are still warm.

Notes

  • Caramelize onions slowly—they’re the star!

  • For extra flair, lightly toast the croutons with melted cheese before adding.

  • Great alongside roast chicken or as a showstopper on its own.
