1 lb ground beef (80/20 for best flavor)
1 tsp garlic powder
Salt & pepper to taste
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
4 large flour tortillas
1 tbsp mayonnaise
1 tbsp ketchup
1 tsp yellow mustard
1/2 small red onion, thinly sliced
Pickles (optional, but highly recommended)
Butter or oil for cooking
Season & Shape: Mix ground beef with garlic powder, salt, and pepper. Divide into 4 equal balls.
Smash & Cook: Heat a skillet on medium-high. Add beef ball, smash it flat with a spatula. Cook 2-3 mins each side. Remove and set aside.
Build the Quesadilla: In another pan, lay a tortilla, sprinkle with cheddar and mozzarella, top with burger patty, onions, pickles, and drizzle of mayo-ketchup-mustard sauce. Add more cheese and fold.
Grill It: Toast both sides until golden and cheese is melted (2-3 minutes per side).
Slice & Serve: Let it rest a minute, then slice into wedges. Enjoy warm!
