Banana Chocolate Chip Pancakes

Ingredients

  • 2 ripe bananas, mashed

  • 1 cup all-purpose flour

  • 1 tablespoon sugar (optional)

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup milk

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup chocolate chips

  • Butter or oil for the pan

Instructions

  1. In a bowl, mash the bananas until smooth.

  2. Add the egg, milk, and vanilla. Stir until blended.

  3. In another bowl, mix the flour, sugar, baking powder, baking soda, and salt.

  4. Add the dry mix to the banana mix and stir gently—don’t overmix!

  5. Fold in the chocolate chips.

  6. Heat a nonstick pan over medium heat and lightly grease.

  7. Pour 1/4 cup batter for each pancake. Cook until bubbles form, then flip and cook the other side until golden brown.

  8. Serve warm with maple syrup or a sprinkle of powdered sugar.

Notes

  • Use overripe bananas for extra sweetness.

  • Add chopped walnuts for crunch and more nutrition!

  • These freeze well—just reheat in the toaster.
